Plate of Crostini with Greek Garlic SauceI LOVE garlic and always have homemade garlic sauce in the fridge. It’s great all by itself on crostini or crackers, or to dip some veggies into.  It’s perfect to use as a condiment on sandwiches, add to dips, soups, other sauces, dressings, marinades, etc.  Need some extra kick in your macaroni salad this weekend, just put in a little garlic sauce. Basically anywhere you would use garlic you can easily add the garlic sauce. And it makes incredible garlic bread (of course)!

I have different styles of garlic sauce that I make, but here’s a favorite Greek version.

A delicious garlic sauce that can be used in so many ways. It has become a staple in our house and I make it every week. Perfect for appetizers, as a condiment, an addition to sauces, soups, dips, salads, dressings, etc.
Ingredients
  • 3 slices of white bread, crusts removed
  • 1/2 cup mashed potato
  • 1/2 cup ground almonds
  • 10 to 12 cloves of garlic, crushed
  • 1/3 cup white wine vinegar
  • 1/3 cup of water
  • 1 cup extra virgin olive oil
  • Salt, to taste
Instructions
  1. Soak the bread slices in a little water. Squeeze the bread dry and place in the food processor.
  2. Place the rest of the ingredients into the food processor (except the salt) and blend until smooth and creamy. Add more water if you would like the sauce to have a thinner consistency. Taste and season with salt, as desired.
  3. Enjoy!
