True to my Italian roots, nothing goes to waste in my kitchen. The other night I roasted a chicken, along with some root vegetables for dinner. We had leftovers, and this morning I diced up the remaining chicken and vegetables and made a hash out of them. I sautéed everything together until it was crispy and golden. I then topped it with a perfectly poached egg and sprinkled some hot sauce on top.
It was a delicious start to the day!
